

California Strawberries

Strawberry & Turkey Panini
6 Sweet baguettes (10-ounce loaves)
1 1/2 cups Strawberry preserves
2 pounds, 4 ounces California strawberries, stemmed and sliced
12 ounces baby spinach
1 pound, 8 ounces cooked turkey breast, thinly sliced
Salt and pepper as needed
1 pound, 8 ounces Gruyere cheese, thinly sliced
Directions
Cut 1 baguette in half horizontally. Spread cut surface of bottom half evenly with 1/4 cup preserves. Arrange 6 ounces strawberries on top of preserves in 1 layer; layer 2 ounces spinach on top of strawberries. Layer 4 ounces turkey on top of spinach; season with salt and pepper. Layer 4 ounces cheese on top of turkey; place top half of baguette over cheese, cut side down. Cut baguette into 4 equal pieces; wrap each piece tightly in plastic wrap. Repeat with remaining ingredients to make 24 panini. Refrigerate until needed. For each serving, to order: Unwrap 1 panini. Heat on griddle with weight on top, turning once, about 5 minutes or until cheese is melted and baguette is crusty. Tips: Use whole wheat or low-carb rolls instead of baquettes. Yield: 24 panini
